White Chicken Chili

White Chicken Chili Recipe by Howard’s Creek Authentic Beer Cheese

Equipment:

Dutch oven

Ingredients:

1 pound dried white navy or northern beans
Chili seasonings
Garlic salt
Black pepper
1 medium chopped onion chopped
2 or 3 raw boneless, skinless white chicken breasts
5 to 6 cups of water
Fresh or canned mild green chilis
8 ounce container of Howard’s Creek Authentic Beer Cheese

Directions:

Sort beans and discard any foreign materials. Rinse thoroughly. Soak over night in large pot with water several inches above the beans or boil in 5 to 6 cups of water for 5 minutes; then remove from heat, cover and let stand for 1 hour. (This is the “quick-soak” method.) After soaking, rinse again several times to take the “gases” out of the beans. Add fresh water to an inch above the beans. Add chopped onion and raw chicken breasts. Bring to a boil and simmer for an additional 1 to 2 hours. Add the rest of seasonings to taste. Simmer until the beans are tender and thickened. Stir occasionally to prevent scorching. Thin with water if necessary. Right before serving, stir in chilies for some really fresh chili flavor. Top each serving with a large dollop of Howard’s Creek Authentic Beer Cheese. Enjoy!
